The trio of owners—co-chefs Trey Smith and Blake Aguillard and G.M. Drew Delaughter—are friends who gutted and rebuilt the structure themselves. They kept the old neon pizzeria sign and opened with little to announce themselves beyond the new name in mailbox-sticker letters on the front door.”
