Best New Chefs
Food &Wine Magazine, 2021
“Chefs Blake Aguillard and Trey Smith are, to put it frankly, huge nerds. The chefs and co-owners of Saint-Germain in New Orleans openly geek out over ikejime, a Japanese fish-butchering technique (it's considered more humane and helps keeps their menu prices down), or the results of a fermentation experiment (transforming scraps of venison into garum, a fish sauce–like condiment that takes three months to make). It's hard to resist getting caught up in their earnest and infectious excitement.”
Best New Restaurants in America
GQ Magazine, 2020
“None of these seem to have affected the enthusiasm that is the dominant mode at Saint-Germain, which opened in a former pizzeria on St. Claude Avenue in New Orleans in late 2018. The trio of owners—co-chefs Trey Smith and Blake Aguillard and G.M. Drew Delaughter—are friends who gutted and rebuilt the structure themselves. They kept the old neon pizzeria sign and opened with little to announce themselves beyond the new name in mailbox-sticker letters on the front door.”
Best Chef in the South Semifinalist,

Best Bars
Southern Living Magazine, 2020
“Serving top-rated wines without the white-tablecloth formality, Saint-Germain channels the breezy spirit of a French bistro in the Bywater neighborhood.”
Restaurants of the Year
Eater NOLA, 2019
“In a town where prix fixe, multi-course tasting menus don’t typically fly, Saint-Germain has struck a smart balance — part casual wine bar, part 12-seat Parisian bistro. Sit at the wine bar or in the courtyard out back and one could be forgiven for having minimal expectations of the bar food menu; one would be wrong, though.”
